Distilled in 2011 and matured for 12 years in a single American oak barrel, this Aultmore has the fragrant, delicate nose yet weighty palate the distillery is famed for, made in part due to its fermentation process. Notes of apple tart with cinnamon pastry and vanilla custard join rich buttered toast with a thin spread of gooseberry jam. Viscous and richly spiced to finish with nutmeg and ginger flavours.

Filled from a single ex-sherry butt, again showing a relatively mild wood influence, this Bunnahabhain is very typical of its style, waxy, fruity and nutty. With flavours of of roasted nut & fruit mix, there is also the classic note of beeswax and honeycomb coming through. There is a creamyness to the palate, with fruit leather and a drying, salty minerality - a classic unpeated Bunnahabhain from the northern reaches of Islay.

Filled from a refill ex-sherry butt, the pale straw colour of this Teaninich shows the wood influence has been very gentle over 13 years. As is typical for this style, the barley really sings - nutty, malty, with hints of buttery pastry and warm, yeasty bread dough. A nutty, very oily quality is present throughout, with cooked apple then a twist of all sorts of woody herbs. An excellent example of the cask giving way to let the distillate truly shine.

Only 210 bottles were produced from this single cask of Laphroaig, matured for 27 years in an ex-bourbon barrel. After this length of maturation, the peat has mellowed, allowing for an extraordinary rise in tropical fruits - char-grilled mango, toasted banana and passionfruit. The peat is still here, with dusty coal smoke and a rich, dense earthiness, with chocolate and rain-wet moors coming to mind. The finish is softly smoky and sooty, with highlights of herbaceous mint.

Distilled at Glasgow's Strathclyde distillery, this 29 year old selection is a 'single grain', the product of grain whisky production from one distillery. Grain whisky is typically matured in less active casks as it's the style sought by blenders, but with nearly 30 years of age this whisky shows a very complex and delicate wood influence. A medley of old-fashioned candies from sherbert to boiled sweets come through with a complex wood varnish and toasted coconut note to finish.

Matured entirely in refill American oak, this undisclosed distillery from the northern reaches of Islay is fresh and vibrant on the nose with lemon oil, salty sea spray and a soft ashy smoke. More citrus on the palate with smoked fish and that classic Islay peat reek. A delicate herbal note joins a sea-side salty finish.

A brand-new release from Elixir distillers and their Port Askaig range, selected from American oak casks that have allowed for a slow and gentle maturation of 17 years. While the source of this whisky is kept secret, there are distinct notes of ham, melon and citrus that is common to a northern Islay distillery. The mellow, medicinal peat smoke shows salty minerality, joining herbaceous tones and red fruit sweetness.

A brand-new cask strength (undiluted) expression from Port Askaig, selected from small batches of barrels from an undisclosed distillery on the Isle of Islay. With zesty lime, black pepper and toasted bread notes comes the signature style of rich, salty peat smoke. A very balanced example of the quintessential Islay style.

A new addition to the Elements of Islay range, this blended malt consists of only malt whisky from the isle of Islay. It has been matured in a combination of ex Sherry, ex Bourbon and virgin oak casks.

There are notes of bonfire smoke and herbaceous sweet smoke

Delicate yet complex, a hint of dark chocolate complements the spirit?s elegant floral profile while the gentle influence of sea air lingers,  a subtle nod to the whisky?s all Islay maturation.

Kilchoman's highly anticipated annual 'Loch Gorm' release brings together peated spirit matured in Oloroso sherry casks, producing a signature flavour profile of sherry wood and smoke. Spicy dark chocolate and layers of rich dried fruit can be found, with a flavour akin to sticky, slightly burnt dark toffee. The fragrant peat smoke melds with these elements, with a touch of citrus oil, a distinctive character of Kilchoman's peaty style.

This new expression from Kilchoman has been matured in a combination of recharred ex Red Wine casks, Oloroso butts and ex Bourbon barrels. A few drops of Kilchoman spring water has been added post maturation to achieve a batch strength of 57%

The nose gives aromas of red fruits, fresh cherries, heather blossom and intense peat smoke. On the Palate we have white grapes, fudge, salted caramel and tobacco leaves with waves of rich smoke. Followed with a finish of toffee, rich spices, vanilla and lasting peat smoke    

In the latest of their ex-wine cask matured expressions, this new release from Kilchoman was fully matured in Sauternes wine barriques. This sweet and sticky wine made in Bordeaux brings out a fragrant and tropical nose of char grilled pineapple, with a warming, spicy note of candied ginger. The peated barley of Kilchoman brings a rush of peat smoke that compliments the lush, silky-sweet flavours from the wood.

Bunnahabhain distillery is especially famous for its unpeated, ex-sherry matured style malts with salty, herbal and fruity undertones. This new expression from Gordon & MacPhail is an example of the rarer peated make. Matured in standard barrels, this showcases the smokier character, but still with plenty of herbal and salty undertones to keep in line with the distinctive Bunnahabhain characteristics - sweet, salty and smoldering smoke.

A new addition to Gordon and MacPhail's 'Discovery' range, this expression was distilled at Auchroisk distillery before undergoing maturation for ten years in a selection of American Oak ex-Bourbon casks. Vanilla aromas are followed by apple and lemon blossom. Sweet and creamy with ripe banana and zesty orange balanced by cracked pepper., with lingering tropical fruit and oak on the finish.

Part of famed independent bottler Gordon & MacPhail's new 'Discovery' range, this 13 year old Caol Ila from the west coast island of Islay falls under their 'smoky' profile, an introduction to bold flavour ranges that Scotch has to offer. We are met with sweet vanilla and dry cured meat aromas. Peat smoke undertones are complemented by banana and apricot. Ripe banana, kiwi and vibrant hints of fresh citrus, leading to a long, sweet and smoky finish.

This expression was distilled at Longmorn distillery in 2008 before being laid down in a parcel of Gordon and Macphail's own casks. it was matured for a total of fifteen years before being cut to a strength of 46%. This whisky is both unchillfiltered and of natural colour.

Stewed rasin and pressed apple aromas compliment autumnal spices. 

Strawberry flavours combine with citrus and walnut. A full finish with ripe plum and chocolate

This Single Cask, Single Malt from Scapa distillery was distilled in 1990 and bottled on the 11/01/22. It has been aged in a refill hogshead cask for 31 years and comes out 60.3%

Fruitcake aromas combine with citrus and raisin. Spicy flavors initially, with dried fruit, dark chocolate and seville orange lingering pepper and red apple on the finish.

This expression was distilled at Ardmore distillery in 2008 before undergoing maturation for fifteen years in a selection of Gordon and MacPhail's own casks. The matured spirit was then cut to a strength of 46% and bottled free of colouring and non chill filtered.

Gentle smoke leads to vanilla, fresh apple and biscuit aromas. Smooth and sweet with tropical fruit, lemon zest anbd walnut, giving way to a medium finish with charred oak.

The Mortlach distillery is one of the most defining examples of the traditional Speyside single malt whisky style. This famous distillery label bottling from Gordon & MacPhail shows the rich sherry cask flavors Mortlach is known for - toffee and orange marmalade notes mingled with distinctly malty tones, with delicate sherry notes and a scent of woodland hedgerows. To taste, flavors of black forest cake, maraschino cherry and creamy vanilla are lifted by orange, gentle oak and a malty edge to finish.

This bottling was distilled at Aultmore distillery in 2009 before undergoing maturation in refill Bourbon barrels and a three year long finish in ex Red Wine casks from the St Joseph region of Rhone, France. It has been cut to strength at 45% and is non chill filtered as well as being natural colour.

Redcurrant aromas combine with sweet apple  and vanilla fudge. Sweet raspberry flavors give way to orange pieces and rich milk chocolate. A full and long finish with blackcurrant and lingering spice

This single cask bottling of BenRiach Single Malt was distilled in 2005 and bottled on the 30/05/22. It has spent 16 years aging in a refill American Hogshead cask and comes out at 58%

Fragrant apple and mango aromas intertwine with dark honey. Tropical fruit flavors complement milk chocolate and poached pairs. A medium finish with citrus fruit and almonds.  

This expression from Gordon and MacPhail was distilled in 2008 at Miltonduff distillery in 2008 and was matured for fifteen years in a single refill Sherry Puncheon before being bottled at the natural cask strength of 63.4%.

Rich Sherry aromas intertwine with ginger spice and roasted hazelnuts. Sweet stewed raisins and aniseed lead to subtle black pepper. A full finish of Autumnal spices and cocoa powder

This single cask expression from famed bottlers Gordon and Macphail was distilled at Caol Ila distillery in 2006 before being laid down in one of Gordon and Macphail's own first fill ex Sherry Puncheons. after seventeen years of maturation, it was bottled at the natural cask strength of 58.3%

Black current jam and festive spice aromas lead to dried banana. Orange and roasted peanuts combine with treacle toffee and sweet smoke. A full finish with stewed berries and bonfire embers.

This expression from Gordon and MacPhail was distilled at Dailuaine distillery before being matured in one of Gordon and MacPhail's own refill Sherry Butts for fourteen years. It was then bottled at the natural cask strength of 57.7%

Sultana aromas compliment cinnamon and milk chocolate with sweet lime. Orange Zest and Brazil nut flavors are followed by herbal undertones. A medium finish with lingering citrus and oak.

Bottled from a small batch of ex-Oloroso sherry cask finished barrels, this Linkwood offers a heavier than normal profile of this famous Spey malt. This additional maturation has brought forward notes of warm, spicy apple puddings, berry compote and pan au raisin. A warm and full mouthfeel leaves a spicy trail, finishing on caramel and liquorice tones.

Matured for 13 years in total, this new Benrinnes has spent its final maturation period in a first-fill Oloroso sherry cask, imparting a rich and dense profile of nutty fruit cake, molasses and a powerful spicyness. A classic ex-sherry Benrinnes, sometimes refered to a 'sherry-bomb' in style owing to its strong sherried and woody flavours.

This new release from Signatory Vintage comes from a selection of two sherry butts from the Ben Nevis distillery in Ft. William. This robust and characterful highland malt often carries a curious savoury edge - somewhat yeasty and meaty. Matured in ex-sherry Oloroso butts, bringing out flavours like orange marmalade and mochaccino.

Remaining a hidden gem, Dailuaine's whisky is often complex, fruity and with herbal elements. Black tea, dried fruit and an orange zest note can be found with a late herbal character coming through on delicate bitter spices and just a whisp of smoke.

One of our most popular drams in this style from Signatory, this Edradour was aged for 10 years in first-fill Oloroso sherry casks. Offering the distinctive flavour of dense, moist Christmas cake laden with currants, raisins and Turkish delight. The palate carries a thick, bitter-chocolate sauce tone, with tangy plum joining in, finishing earthy and heavily spiced.

Part of Signatory's all-new 'Small Batch' series, this Inchgower was chosen from a handful of ex-Oloroso sherry casks. Offering up a rich nose of the usual sherried fruit profile (dark and dried fruits galore), there is an undertone of red wine punch, laced with oranges. With a touch of beeswax then fruity again on the palate, it has a note of caramel and black tea, lingering on chocolate coated brazil nuts.

Those familiar with distilling on the Northern island of Orkney will know there's only two possible sources for this undisclosed dram from Signatory - and there's seldom whisky bottled from Scapa! Drawn from a vatting of 13-year-old refill hogsheads, this whisky brings a nose full of buttery shortbread and sweet rolled oats, with a touch of lemon zest and faint heathery smoke. Malty and rich on the palate, with subtle coastal salt pairing with freshly-baked tan square, leaving a waxy and warm finish packed with orange peels and toasted biscuits.

Matured for 14 years at an undisclosed, secret distillery from Speyside in Scotland, this new Signatory Vintage release offers a delicate and floral start, with a warm sweetness underlying. A rich flavour through of old fashioned buttery toffee joins a delicate spice and orange marmalade. Mellow, rounded and complex.

A seldom seen expression, Ardlair is the name given to unpeated spirit from Ardmore distillery. Typically it is light and sweet, with notes of floral honeysuckle and buttery fruit pasteries. This expression has been matured in a single refil Oloroso Sherry Butt and bottled at the impressive natural strength of 60.9%. With releases of Ardlair few and far between, this is a chance to taste a completly unique example from Ardmore distillery. 

This expression from Benrinnes distillery has been bottles from a single Dechar/Rechar ex Bourbon Hogshead. While each single cask bottling varies greatly from one another, Benrinnes has a signature fruitiness along with notes of hard caramel sweets, with a very slight spicy note as well.

This expression from Signatory Vintage hails from Caol Ila distillery, matured for sixteen years in a single first-fill ex-Oloroso sherry butt, bringing a wonderful collision between fruit, smoked meat and peat. There are the expected notes of coastal peat smoke, joining flavours of tart homemade blackberry jam and a selection of fatty, salty smoked meats - bottled Islay charcuterie.

This bottling from Caol Ila has been aged 14 years in an ex bourbon hogshead cask. Delivering the typical flavours of this great Islay distillery, there is a generous offering of peat on the nose, reminiscent of a coal fire on a hot day. Coastal see breeze and notes of distant bacon accompany tropical fruits.

A single cask expression hailing from the iconic Glenlivet distillery, this out-turn has been matured for seventeen years in a single first fill Oloroso Sherry butt. Bottled at natural cask strength by famed independent bottler Signatory Vintage, it is rich and fruity with notes of apple and raisin, with the oak also bringing hints of warming sweet spice and black tea.

A not-so-secret bottling from a famous distillery on the Orkney Isles (HP), this single cask expression was matured for 18 years in an ex-Oloroso Sherry Butt. There is a typical waxy note found in whiskies of this age from this particular distillery, along with notes of heather honey and oatcakes, along with the faintest whiff of coastal peat smoke. A spectacular old dram from Orkney.

Ballechin is the name Edradour gives its heavily peated spirit, and this release is their new standard expression bottled after 10 years of maturation. The peat character of this is remarkably Islay-like, with a rich earthy smoke, ginger spice, and amazingly even a hint of coastal, farmyard aromas. A standout example of the non-Islay peated style.

The Wolfburn distillery is one of the more remote distilleries in Scotland, situated a great distance from southern Spain, where these Manzanilla sherry casks were sourced from. The dry, nutty and salty flavour of this wood marries with Wolfburn's sea-side style, joining honey and pear flavours. To taste, a shifting tide of sweet barley gives way to a lingering, mellow dryness from the oak.
