The third Chapter in Torabhaig's 'Legacy' series Cnoc Na Moine showcases a combination of ex Bourbon, Oloroso and Pedro Ximenez casks. This expression balances powerful and robust peaty tones with rich sherried notes, resulting in a complex and well layered dram. On the nose there are gentle notes of underlying peat smoke, citrus zest vibrant red fruits and touches of underlying vanilla and freshly cut oak. The smokiness takes hold on the palate, with notes of smoky barbeques, spicy black pepper and balsamic zest. Hints of sweetness pokes through the smoke, and hints of sweet spice. Notes of cedar and tanned leather emerge later on. The sherry cask influence emerges through the smoke on the finish, balancing with the smokiness and gentle spice wonderfully.
